So the only problem I'm left with now is the intermittent transfer failures when I download from the camera, JPG or RAW. I bought a functioning Verbatim reader, and it works - I can transfer the RAW files just like any other files on any hard drive without having to use EOS Viewer.
But it turns out that's not necessary - the card reader I bought was defective. When that didn't work, Canon tech support advised me to use the EOS Viewer for transfering via the card reader as well. I bought a card reader as advised, a SanDisk read/write for CF.
I'll try PS later on just for the heck of it. Bit of a weak interface if it's not intuitive to even a techie like me! So anyway, I can now download RAW files from the camera, but only through EOS Viewer. You must drag the folders on the panel on the left side. I was trying to select and drag the images into folders, and that doesn't work.

I had been able to view the RAW files using EOS Viewer, but didn't know how to save them.
I phoned support, and they advised me that RAW files can only be read using the EOS Viewer Utility. Okay, I think I have solved a big part of the problem - RAW files.
